Prepare the following ingredients:
For the cupcakes:
- 3/4 cup (150 g) superfine sugar
- 2/3 cup (150 g) softened butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups (190 g) self-rising flour
- 1/4 cup (60 ml) milk

- 1 cup vanilla frosting
- Colorful sugar sprinkles
1. Preheat the oven to 350°F (175°C).
2. Place paper liners in a 12-cup muffin pan.
3. Remove the butter from the refrigerator about 20 minutes before baking so it becomes soft.
4. Measure all ingredients and place them on the kitchen counter.
Preparing everything first makes the baking process much easier and helps us avoid mistakes.
1. Put the 150 g softened butter and 150 g superfine sugar into a large bowl.
2. Use an electric mixer to beat them together for about 3 minutes.
3. Continue mixing until the color becomes lighter and the mixture looks fluffy.
This step adds air to the batter and helps make the cupcakes soft and tender.
1. Add the first egg and mix until fully combined.
2. Add the second egg and mix again.
3. Pour in 1 teaspoon vanilla extract and stir gently.
The batter should now be smooth and creamy.
1. Add about half of the 190 g self-rising flour and mix slowly.
2. Pour in half of the 60 ml milk and stir.
3. Add the remaining flour and milk.
4. Mix just until there is no dry flour left.
Do not mix for too long. A short mixing time helps keep the cupcakes light and moist.
1. Use a spoon or a small scoop to transfer the batter into the prepared muffin cups.
2. Fill each cup about three-quarters full.
This amount gives the cupcakes enough space to rise and form a beautiful rounded top.
1. Place the muffin pan on the middle rack of the oven.
2. Bake for 18 to 20 minutes.
3. The cupcakes are ready when the tops are lightly golden and spring back when gently pressed.
During baking, the sweet vanilla aroma will slowly fill the kitchen.
1. Remove the pan from the oven.
2. Let the cupcakes rest in the pan for 5 minutes.
3. Transfer them to a wire rack and cool completely.
Once cooled, spread or pipe about 1 tablespoon of frosting onto each cupcake. Finish with colorful sprinkles if you like.

- If you would like to prepare them in advance, freeze the unfrosted cupcakes for up to one month. Let them return to room temperature before decorating.
